Chai Chia Pudding

I used to post recipes all the time. Because the kitchen is where I play and nourishing food is where my heart is.

This past year has found me more in the writing world than the recipe world.

Let’s merge those 2 today.

It’s seems like a typo… Chai Chia!


The aroma of chai tea steeping in the kitchen makes me happy.

Let’s get to it.

Chai Chia Pudding

Into the blender:

  • 6 dates
  • 4 cups strong chai tea

Soak dates for 30 minutes (to blend easier and save your blender motor), then add

  • 2 tbsp coconut butter
  • 4-6tbsp or more of honey (sweeten to taste)
  • 1 cup chia seeds
  • 1/2 tsp vanilla powder or extract
  • pinch of salt

Blend until well-combined

Pour immediately into containers and chill overnight

Truth: often the pudding doesn’t make it into the fridge. We eat it warm (chia seeds will be chewy).
